Iwate abalone is one of the world's three largest dried abalone. Also known as Yoshihama Abalone, the authentic place of origin is Yoshihama, Iwate Prefecture. Its shape is as high as ingots on the outside and low on the inside. There is an obvious line mark in the middle. The bottom is wide and flat. The abalone has thick flesh. The tail of the suction basin is sharp and the pillow bottom. It looks like a clear bead and has a dark brown color. Therefore, it is also called "golden abalone", with golden color as the top grade. First soften the dried abalone this way: Rinse the dried abalone briefly with water. Bring some mineral water to a boil in a saucepan then add the dried abalone. Let it come to a boil again. Take the saucepan off the heat and cover the saucepan. Let the abalone soak for a minimum of 8-10 hours or preferably overnight. The soaking water can be used for cooking. Do not overcook them. They will be tender and delicious.
