    N° 14 is the third opus from the “COLLECTION AYALA,” a set of cuvees produced in limited quantities, unveiled only as they approach their peak level of drinkability. This ephemeral cuvee is 60% Chardonnay and 40% Pinot Noir — including Grand Cru Aÿ red wine. Thanks to its extended ageing in the cellar and a low dosage of 5.3 grams/liter, N° 14 expertise, the ephemeral cuvée N°14 is composed of the five emblematic Grands Crus that form the backbone of the House’s blends. Caroline Latrive wanted to work the crus in equal proportions, exclusively from the 2014 vintage and for the first time in a rosé version.

    THE STORY Each village has its own style. Le Mesnil-sur-Oger (20%): acidity, purity and chalky minerality. Avize (20%): balance and structure. Oger (20%), warmth, body and generosity. Cramant: smoky minerality. Chouilly: robustness and length. And finally, Oiry: acidity and roundness. To reprise the musical analogy, each territory has its own score and, when they are all played together to create Delamotte Blanc de Blancs 2014, each one can be heard in its own right. It is left to age over six long years. Not much, given the powerfulness of this wine. Its richness is equalled only by its concentration, and yet it remains light on its feet.     There is a hint of the exotic about the making of Delamotte Rosé champagne, and perhaps a little eccentricity too! It is made with the traditional bleeding technique rarely used in Champagne. Color and aromatic range are extracted from the grape skin. How? They are left to macerate in their skin before and/or during fermentation. This delivers an elegant and structured wine thanks to Grand Cru Pinot Noir growing on the south-east facing hillsides of the Montagne de Reims: Ambonnay, Bouzy and Tours-sur-Marne. In association with Chardonnay from Mesnil-sur-Oger, this rosé is a dazzling salmon pink in color, with an amazingly complex wine sparkling beneath. After bottling, Delamotte Rosé matures for around three years on the lees before disgorgement. TASTING NOTES This is a refined, somewhat smoky wine, the stuff that dreams are made of - for an afternoon or at dessert time, with perhaps a raspberry charlotte or a red fruit coulis. PAIRING The ideal accompaniments for this sophisticated wine with slightly smoky notes are raspberry charlotte, red fruit soups and sugary desserts of the kind that Marcel Proust would surely never forget.

    J Charpentier Reserve Brut

    J. Charpentier's Champagne Brut Réserve is made from grapes from different crus of the region (Reuil, Binson-Orquigny, Châtillon sur Marne, Villers sous Châtillon, Le Breuil, Neuville sur Seine, Ludes) and contains 80% Pinot Meunier and 20% Pinot Noir. The history of the maison begins at the turn of the 20th century. Since then the generations have succeeded and the winery is still family-run today. The fermentation of the grapes takes place in steel tanks at a controlled temperature and is followed by the malolactic fermentation and the assembly of the reserve wines. Champagne rests on the lees for 30-36 months. In the glass the wine is brilliant, straw yellow in color, with a fine and persistent perlage. On the nose there are aromas of fresh yellow fruit, brioche and bread crust. In the mouth the wine is creamy, full-bodied and enveloping, with a good persistence.
