    Fukano Vault Reserve 2 Whisky

    Fukano Vault Reserve 2 Whisky

    Founded in 1823, Fukano Distillery is located in Hitoyoshi City, of the Kumamoto Prefecture of Japan on the island of Kyushu. Hitoyoshi is surrounded by mountains and is known for its pure water and nature. Shigeruriku Fukano is the fifth generation of his family to run the distillery. They use a combination of malted and un-malted rice to make their whisky in a pot still. These releases are very limited in nature and only a few casks are bottled each year.  The Vault Reserve 2 is fuller and more rounded than its #1 release, with a sweeter taste profile and a softer mouthfeel. On the palate expect notes of vanilla, cocoa, brown sugar, and bourbon. Despite this, it's still a fairly bright whiskey, with hints of orange peel. Overall a richness and spice that makes you want to curl up by a fire. Bottled at 40.4% abv.

    Fukano Vault Reserve 1 was announced in November 2018 alongside three other limited edition expressions: Fukano Vault Reserve 2, Fukano 6000 and Fukano Jikan. All four limited edition expressions are a combination of whiskies between the ages of 3 and 11 years old. Some of the whisky was first matured in casks and then moved over to be kept in different tanks for up to 16 years to rest. After tasting each tank individually, the brand created four different combinations from the tanks. 5,443 bottles were produced globally and it is bottled at 40.5% ABV.

    This whisky was announced in November 2018 alongside three other limited edition expressions: Fukano Vault Reserve 1, Fukano Vault Reserve 2 and Fukano 6000. All four limited edition expressions are a combination of whiskies between the ages of 3 and 11 years old. Some of the whisky was first matured in casks and then moved over to be kept in different tanks for up to 16 years to rest. After tasting each tank individually, the brand created four different combinations from the tanks. This release is meant to celebrate the history of Hitoyoshi, Japan. The label art was created by local artist Junishi Oda. 1,200 bottles were produced globally and it is bottled at 40.4% ABV.

    This is one of the most important wines that we make at Hattingley, it is the most widely available and arguably one of the most loved. Whilst many people will assume that a ‘vintage’ wine is automatically better (often not the case!), this Non-vintage shows off the skill of Emma’s winemaking. Being able to blend the wines from different grape varieties, different vineyards, barrels and tanks to try and maintain a consistent style is one of the toughest jobs that the winemaking team have to do. This is our all-rounder, our crowd pleaser and a wine that is very easy for all to love! YEAR - Non-Vintage (based on 2015 harvest)GRAPE - Chardonnay 53% Pinot Noir 31% Pinot Meunier 16%ALCOHOL (ABV) - 12%VEGETARIAN/VEGAN - YesSTORAGE RECOMMENDATIONS - Please keep in a cool, dark place if possible.DRINKING WINDOW - Drinking very well now, will improve and mature over the next 3-4 years. June 2020. Awards Harvest The 2015 growing season was a test of good site selection and our vineyard team did a wonderful job in challenging conditions - the summer was cooler than the previous year, particularly in August which is the crucial month for veraison and the start of the ripening season. The pinots were super-ripe with wonderful flavours, good acidity levels and deep colour, and good vineyard sites produced some very fine Chardonnay as well. ‘Blending this wine was the Eureka moment – the whole team recognised the distinct Hattingley style immediately it came together in the glass.’Emma RiceHead Winemaker Winemaking The hand-harvested grapes were whole bunch pressed to extract top quality juice. 19% of the total blend was barrel fermented in old white Burgundy barrels and partial malolactic fermentation took place in order to soften the wine’s natural acidity. To ensure the consistency and continuity of our signature style, 23% of reserve wines (that had naturally softened and developed over time in oak barrels and stainless steel tanks) were added to the blend before secondary fermentation. After 3 years ageing on lees in a bottle to add roundness and character, the wine was disgorged with a light dosage of 7 g/L. Tasting Notes Our Classic Reserve is pale gold in colour with delicate and fine long-lasting bubbles. The beautifully complex bouquet combines aromas of green apples with creamy nougat, freshly baked brioche and delicate toasted notes from ageing in bottle. On the palate, the complexity continues with notes of soft lemon sherbet, biscuit and a subtle oak character. Refreshing and perfectly balanced, with a delightfully long finish.

    Rowans Creek Bourbon Whiskey

    Rowans Creek Bourbon Whiskey

    Type: Bourbon, Whiskey (American) Producers: Kentucky Bourbon Distillers Size: 750ml Country: USA Region: Kentucky Made by Willett, this is a spicy bourbon. This bourbon stacks up well against much more expensive limited release offerings from other distillers, and at under $40, makes it a bargain value as well. Rowan’s Creek perhaps is a slightly less refined cousin to Noah’s Mill, and that’s definitely a good thing, as Noah’s Mill has been a personal favorite of ours for a few years now. Aroma: The initial nose is sweet with a discernible hint of peach and fruitiness. There is a light woody character to the aroma, but the oak scents are not prevalent, but a faint minty scent underlies the entire experience. Flavor: Right off the bat, the whiskey tastes slightly young. There is no bitterness, but just a touch of harshness that begs for another year or two in the barrel. It’s not an overpowering sensation, but was noted. A clove-like spiciness starts at the middle of the tongue and gives way to the aged caramel and oak flavors that were missing on the front of the tasting, at which point the age of the bourbon finally shines through and the initial bite subsides. If you add water it will certainly calm down the harshness at the front of the tongue, and bring out some hints of honey and cedar that were muted when taken neat. This is a bourbon that certainly stands up to water and ice, making it a great everyday drinker. Finish: It definitely tends just a touch towards the long side without being exaggerated. The oak, mint, and caramel remain evident throughout for a very pleasant overall finish.
