大禹岭是台湾新兴的高山茶产区,茶区开垦不久,但所产的茶叶已经是公认台湾最顶级的高山茶。大禹岭茶之所以广受欢迎,最主要的原因就是因为地处2600 公尺的高山,寒冷且温差大,在这种环境下茶树生长缓慢,因此茶质幼嫩,茶味甘醇,加上当地排水良好的酸性土壤,得天独厚的环境造就出独一无二的好茶。

冲泡后,果花香清扬芬芳,因为是半发酵的缘故所以茶味清爽许多,入口就能感觉到它的清扬细腻,花果香独特,带有冷矿山特有的山场气意,落喉甘滑韵味饱满,色、香、味、甘,回甘迅速有层次,喉韵甚佳,回香绕舌不退。

水温要求

由于大禹岭茶包含某些特殊的芳香物质需要在高温的条件下才能完全发挥出来,所以一定要用沸腾过的95度C的水来冲泡。小提示:使用95度C的水泡制小叶或嫩叶型乌龙茶时,茶汤出水时间务必掌握在20~40秒之间。

开汤时间

台湾的泡茶法是高山茶冲泡时浸泡的时间第一泡一般是45秒左右,再次冲泡是60秒左右,之後每次冲泡时间往後稍加数10秒即可。闽北和潮州的乌龙茶开汤时间则要快得多,第一泡15秒就可以了。小提示:以多年在国内的经验,初接触台湾茶叶的饮茶同好以闽北的乌龙茶开汤法较容易接受。具体的茶叶汤时间因个人口味而不同,主要得靠泡茶人自己掌握。
