Red Snail Bamboo Fungus Soup
150 grams of red snail head, 80 grams of bamboo fungus [aka dried white bamboo, bamboo pith, Phallus indusiatus] 400 grams of pork bones, 80 grams of red [adzuki] beans, 4 slices of ginger.
Cooking: Rub the red snail meat with saltwater and scrub it; soak the bamboo fungus and chi xio dou [adzuki] in warm water; cut into sections. Put it in a clay pot and add 2,500 ml of water (about 10 bowls). After is boiled, change to a simmer for about 2 hours. Finally, add a little salt, then serve for 4~5 people.
