Winemaker Notes Hickinbotham Clarendon Vyd Trueman Cabernet Sauvignon McLaren Vale 2015 This is the most homogenized, smoothly-assimilated Cabernet in recent years from Hickinbotham, reminiscent of those made by Stephen Hickinbotham in the early ‘eighties. While its aromas of bergamot and blueberry have yet to lock in and settle, the palate’s already there: fine, fresh and strapping. It’s an elegant, savory wine now, but will smooth out and flesh up to memorable opulence with a decade or two in the cellar.

A muscular, rich wine, this opens with heady, almost raisiny red-berry fruit, with licorice, earthy herbs and spices, touches of floral notes and vanillin oak. Tannins are chewy and drying, showing a good lick of oak along with the ripe fruit. Earthy North African spices: ‘Ras El Hanout’ - paprika, cinnamon, pepper, cloves, and fennel. On the palate, always honest, warm, and approachable. Chocolate mud cake, cinnamon syrup, poached red cherries. Coconut shavings, milk chocolate... wait, a Bounty bar! Summer plum pudding with currants and crème anglaise. Bone marrow broth, Vietnamese Phò - layered complexity and texture. Turmeric, cinnamon, star anise clove. Cola with a suggestion of Chinotto bitterness. Sweet, layered fruit with earthy spices.
