High Mountain Fog Green Tea #1183
This tea really gives the impression of being out in a high mountain meadow when a heavy fog is settling down and there is a grassy, woodsy fragrance of a fresh morning outdoors. Very pleasant, no overpowering odors or unbalanced flavors with just the perfect amount of dryness and astringency to keep it refreshing. According to the manufacturer:
Gaoshan Yunwu Tea is produced in Wuyi County, Zhejiang Province. The mountain clouds [tea] are collected from young buds and leaves in early spring. The raw materials are one bud, one leaf and two leaves. The shape is even, slemder and green, with a slight dew front. Once brewed, the color of the soup is bright and green, the fragrance is lasting, and the taste is mellow and long, leaving a lingering fragrance after tasting. The shape of the tea is flat, sharp like a sword, and the color is green and white. The soup color is bright apricot, the leaf background color is green and the fleshy leaf shape is initially single, the size is uniform, and the plant is rich and long-lasting. Around the vernal equinox, it can be harvested in spring, summer, and autumn throughout the year. The quality of Mingqian tea is the best.
The tea grade is “ Supreme” the flavor is described as mellow, roasted chestnuts with an underlying note of bitterness. Store the tea in an airtight packing in a cool, dry place. The shelf life is 18 months.
Tea brewing: the Chinese Gaiwan or Gongfu method of brewing using a small yixing tea pot and little tasting cups. It is a time-honored tea ceremony to be enjoyed with friends. First the pot and cups are warmed by pouring boiling water in them which is discarded. Then dry tea leaves are placed in the empty warm teapot, keeping the lid on for 10-20 seconds to awaken the aroma. Lift the lid to enjoy the fragrance. Then add boiling water to the pot, swish it around, rinse the tea for 5 seconds and discard the water. That prepares the tea leaves. Finally boiling water is added and briefly steeped as shown:
