Fruit is entirely hand-harvested and pressed as whole clusters, then fermented spontaneously in 350L barrels, followed by an oak regiment of only 20% new French oak for 18 months. This results in a Chassagne which is incredibly focused, opening with with aromas of white peach, baked pears, lemon blossom, and the list could go on. On the palate, this wine in elegantly textured and energetic, balancing ripe orchard fruits with a pronounce chalky and saline minerality.
