Anne-Claude's goal was to produce serious, dry Chenin Blancs to showcase the mineral character of the Loire rather than a oaked style.\u003c\/p\u003e\n\u003cp style=\"text-align: center;\"\u003eThe wine is entirely Chenin Blanc, harvested by hand and gently pressed before a long native yeast fermentation takes place. The wine opens with ripe pear, yellow apple, mirabelle plums, followed by lemon and chamomile. The amount of fruit on this wine is carefully underscored by a fine precise mineral character that unfurls with air and time in the glass.
