The shallow volcanic soils and southern exposure consistently produce the estates most mineral driven Chardonay, leading to a signature complexity and \"liquid minerality\". Fermented entirely using indigenous yeasts in French oak barrels and aged sur lie for 12 months with weekly batonnage for an incredible richness and perpetual finish. The 2024 spills out of the glass with aromas of blossoms, jasmine, lilac, chamomile. Far from a delicate wine however, this wine also delivers in ripe cooked fruits such as baked pear tart with a buttery short crust, and that intense mineral tinge of crushed stone and petrichor which are carried by bright vibrant acidity.
