This led to small richly concentrated fruit, and shifted the balance of the blend towards Cabernet Sauvignon, making up a whopping 92%, and the rest Merlot. Following harvest, careful sorting employing optical sorters (Machinery which employs infrared light to \"read\" each individual grape and then rejects those not meeting criteria), the wine is fermented and then matured in 100% new French oak barrels.\u003c\/p\u003e\n\u003cp style=\"text-align: center;\"\u003eThe nose is profound with classic cassis, blackberries, plums, pencil shavings, violets, and the list could truly go on. On the palate, we see the power with an enormous concentration, polished tannins, which coat the palate with a velvet texture. Full bodied, with a finish that showcases the finesse, mineral, graphite, cedar, cocoa and slight herbal aromas. This is a long-haul Mouton with the structure to evolve over decades, in its current youth expect explosions of fruit and chocolate; With bottle age the ostentatious fruit mellows into tobacco, truffle, leather, and increasingly comlex tertiary aromas. Enjoy this wine now with a gentle 8-hr decant in the bottle, or pour into a decanter for around 2-hrs.
