During the Ming Dynasty, the first Yixing teapots originated west of Taihu, the great lake in the Jiangsu province around 100 miles from Shanghai. They became a favorite of the Chinese intellectual class for their naturalism in both material and form. The distinctive reddish stoneware teapots came to be considered the best for brewing tea. The small teapot was created to intensify the tea flavor.
First rinse the server and cups with boiling water to warm them. Using the tea pick, add dry tea leaves to the empty tea strainer, place it on top of the tea server, and pour in boiling water. Serve yourself or friends from the small cups. Refresh with boiling water as needed from the teapot. Over time, the porous handcrafted clay absorbs the flavor of brewed tea. Never use detergent to clean the elegant tea set. After use, rinse it with clear water and allow it to dry.
