    Bouvet Signature Brut is produced from a blend of Chenin Blanc and a smaller percentage of Chardonnay grapes grown in the chalky limestone "tuffeau" soils characteristic of the Saumur appellation. The base wines are vinified in computer-regulated, temperature-controlled stainless steel tanks to preserve the delicate aromas and elegant fruit of the grape.

This particular note is the very essence of our vineyard and its Chardonnays, which grow in a pure chalk soil. Yes, the wines may be a little austere when young, which is why maturation on the lees – far longer than the statutory 15 months – extends to four or five years before disgorgement. Aging after disgorgement continues to perfect the finesse and elegance of this cuvée.     Winemaker Notes A beautiful pale pink hue with amber glints reminiscent of the color of apricots, enhanced by discreet, pearly bubbles and incomparable finesse. Intensely perfumed, the complex nose immediately announces a powerful, structured, great rosé wine. The Pinots Noirs, vinified as still red (8% of the blend) give the wine a particular aroma: that which comes from a simmering pot of bubbling strawberry jam, candied fruit mingled with mild spices such as cinnamon, cardamom, honey and pink praline. A true journey through flavor, the palate revels in the creamy sensation of juicy plums. This wine is characterized by a silky texture reminiscent of fig pie, pine nuts, and sweet pastries. Spicier notes of liquorish and cumin that come into play. The finish is warm and round, marked by notes of blackberry tea, cherries, pink peppercorns and fresh figs.

    All grapes harvested by hand. Noël Pinguet was one of the first French vignerons to adopt biodynamic viticulture and credit biodynamics with enhancing the personalities of the estate's terroirs. Pétillant, also known as Methode Ancestrale, is a sparkling wine method where the wine is bottled before primary fermentation is finished, resulting in a lower pressure sparkling wine. It is called "pétillant" because only a portion of the fermentation occurs inside the bottle. Yeast is added to ensure the fermentation progresses smoothly.

Producted from an assemblage of white grape varieties of Champagne, this Blanc de Blancs allies the identity of its roots with the impertinence of modern winemaking. To the forgotten Champagne grape varieties: Arbane (25%), Petit Meslier (25%) and Blanc Vrai (25%), which express themselves in a tight sap, the classic Chardonnay brings its elegant and persistent note. The cuvée displays aromas of very fresh grapes, citrus fruit, white flowers or honeyed apples. The Quattuor cuvée, from the number four in Latin, is a fine Champagne, mineral and chiselled.     Fleur de Miraval Rose Champagne

    Fleur de Miraval shows a very gentle and bright rosé colour, a vivid mousse with fine bubbles. The nose starts out elegantly – layered and nuanced with chalky notes, roasted hazelnut, marzipan, fresh butter, pink citrus and lemongrass. After some time in the glass the Pinot enters with crushed raspberry, cherry and pain d´épice notes. The palate is nicely built, showing great flavour intensity and an invigorating freshness. It´s classically bone dry (4,5 grams of dosage) with a chalky presence , balanced by a mellow creaminess. Flavours of marzipan, confit de citron and peach with layers of mature nuttiness and fine pastry. Elegantly built with great persistency and precision. Drinks truly well today but should certainly improve from further cellaring.
