    Tasting Notes “The inaugural vintage of our Unwritten Signature Series Oakville Cabernet Sauvignon is an absolute show-stopper. From the heralded 2021 vintage, the nose is replete with graphite, blackberry and jasmine. It is heady and inviting. The voluptuous nose leads to a complex and dense palate. Blue and black flavors of anise and cardamom are intermixed with notes of crushed violets and slate. Although 100% Cabernet, it almost reminds us of the exotic perfume that can come with the addition of a few percent Petit Verdot. This wine is a perfect example of what Napa does so well: classically balanced, smooth, persistent and delicious. It is a great wine from a great vineyard in a great vintage.     Winemaker Notes The 2015 Merlot is dark and brooding, akin to the 2008 vintage. Yeasty blackberry cobbler, Asian spice, exotic Mandarin orange peel, and a touch of graphite defines its aromatics. Explosive, rich, dark very complex layers of delicious fruit evoke blackberry, sour cherry, crème de cassis and an intriguing note of Hoisin. The texture has a rounded suppleness, with a firm spine from its Cabernet component to tighten the structural core and add a trailing finish. The finish is long and expansive. Amazingly approachable now, this wine has the stuffing to age gracefully and could outrun common assertions of age-ability for Merlot. The 2015 Merlot should hit its peak in 2020-2022, and may be great for many years after. Blend: 81% Merlot, 13% Cabernet Sauvignon, 3% Petit Verdot, 2% Malbec, and 1% Cabernet Franc

    Product Highlights Sonoma Valley, California- The wine is dense, ripe and powerful, an effusive vortex of blackberry, toast, brown sugar, allspice, cassis, dark chocolate, earl grey tea, mint, anise, sugar cookie, chai, and tarragon. The palate is massive, but fruit sweet, supple and creamy. The magnificently steep vineyards of Immortal Estate are among the steepest in California, planted on a dramatic 55-degree slope on the Mayacamas range.     The 2013 Napa Valley Cabernet Sauvignon enters the glass with a ruby red to brick red color. On the nose it opens with warm notes of strawberry and cranberry and a hint of persimmon and tamarind. Aromas of plum and dried stone fruit emerge after that, with undertones of petrichor and sandalwood. On the palate, this wine is extraordinarily balanced with a soft and sapid tannin structure and a subtle fresh acidity. Nimble and precise red berry fruit aromas dominate the front palate while the mid palate demonstrates considerable aromatic complexity of red stone fruit and orange rind with earthy and savory undertones.
